A sweet and sour coconut-based sauce - flavours that remind us of our sun-kissed coconut and mango plantation.

Delicious served over roasted chicken/ fish or your favourite vegetables and chickpeas, sprinkled with toasted cashews. Basmati Rice scented with a cinnamon stick and whole cloves compliments this meal .

 

Ingredients:

Organic coconut milk, mangoes, onions, ginger, lemon juice, garlic, cilantro, rice flour, curry spices , Thai lime leaves, olive oil , sea salt & fresh ground black pepper .

 Instructions: Thaw and empty contents into a heavy bottomed skillet or pot . Add roasted meat and vegetables. Cover & Simmer over medium heat for 8-10 minutes stirring often until sauce temperature reaches 74C/ 160F.
